Recipe: Virgin Mojito Mocktail

A popular cocktail drink from Cuba, the mojito can also be made without alcohol and is referred to as a virgin mojito. It is prepared in the summer and served over ice in a high ball glass. Ginger,sugar, fresh lime juice, soda water, fresh mint, pineapple juice, and crushed ice are the main ingredients of a traditional mojito. Fresh lime juice is combined with sugar and mint leaves to make a mojito. A muddler is then used to gently mash the mixture. To extract the essential oils from the mint leaves, they should only be lightly bruised; shredding is not recommended. To dissolve the sugar and pull the mint leaves up from the bottom of the mixture for better presentation, the mixture is briefly swirled. Crushed ice and sparkling soda water are added as a final toppings to the beverage. The tumbler is garnished with lime wedges and mint leaves.

Ingredients (for 150 tnl glass) 
• 8 mint or spearmint leaves 
• 1 thin slice of ginger 
• 1 lime. squeezed
• 1 tablespoon of brown sugar
• 60 ml (about 2 ounces) pineapple juice
• 60 nil (about 2 ounces) soda water
• Crushed ice 

Preparation
• Place mint or spearmint, lime juice, ginger and sugar in a mortar and mash to blend them thoroughly, and in order for the mint to release its essence.
• Pour the previous mixture Into a glass or goblet
• Add the ice. pineapple juice. and soda water
• Garnish with a mint leaf and a wedge of lime.
• The rim of the glass or goblet can be moistened with a lime and frosted with brown sugar.
